This is one of my favorite low-sugar dessert recipe for the whole family that can be ready in less than 10 minutes. It can also be a healthy snack for kids.
Mascarpone cheese: I love the creaminess and rich flavor of mascarpone. It is widely used in many desserts. This no bake mascarpone-yogurt cup gives it a little twist to the regular yogurt parfait you are familiar with.
Yogurt: I love Greek yogurt for its creamy, smooth texture. You can use any of your favorite yogurt. The one with no sugar added is the best. This allows you to adjust the sweetness later and can still control how much sugar is in there.
Sweeteners: I use honey and jam -- honey to sweeten the mascarpone-yogurt mixture and jam to add some color and interesting flavor. You can use other sweeteners such as table sugar, applesauce, pureed bananas, or just your favorite jam. Do not give honey to infants younger than one because honey contains bacteria that may cause botulism in infants.
Toppings: You can add any of your favorite toppings such as fresh or dried fruit, granola, nuts and seeds, chocolate, or some fresh herbs. In the summer, I love to top it with fresh peaches we pick at an orchard.
Recipe
Servings: 6
Time: 10 minutes
Ingredients:
8 oz plain Greek yogurt
8 oz mascarpone
1 tbsp honey
3 tsp blueberry jam or any jam you like
fresh figs
roasted pumpkin seeds or any nuts and seeds
Instructions:
Slice the figs.
Mix the yogurt, mascarpone and honey well.
3. In a small cup, add 1/2 tsp blueberry jam on the bottom.
4. Add 1/3 cup of the mascarpone-yogurt mixture into the small cup. Add the sliced figs and roasted pumpkin seeds.
5. Enjoy!
